Banquet on a Budget

Each week, we will be featuring a different recipe with a focus on healthy but budget-friendly meals.  Each recipe will be accompanied by a price comparison chart for Wal-Mart and Kroger.  Our focus should be on maximizing nutrients and limiting empty calorie producing additions, such as unhealthy fats and sugars. 

Each Tuesday will feature a new recipe and new comparison chart.  Don’t be afraid to utilize coupons for extra savings; instead, seek them out!  Coupons, even for small amounts, can add up to big differences.  Also, if you have a Kroger card, you have access to many digital coupons that will give you savings as well.  In addition, if you purchase certain items often, you will receive even better coupons on these items.  Follow the Muhlenberg County Health Department page for weekly recipes and tips. 

 

This week’s recipe…

Honey Mustard Chicken

  • 3 lbs. chicken breast, tenders, or boneless thighs
  • 1/4 C honey
  • 1/4 C Dijon mustard

For oven preparation, preheat to 400 degrees.  Place chicken in baking dish, or place chicken in slow cooker.  Add just enough water to the container to cover the bottom; this will allow the chicken to be juicier and not stick to cooking surface. Mix mustard and honey in bowl, pour over chicken.  Cook for 30-45 minutes (ill depend on the size of each piece) until juices run clear when pierced with fork. Can be served with any vegetable or whole grain pasta.
